Today’s recipe is Grilled Coconut Basil Shrimp. Coconut combined with basil and shrimps make a heavenly combination.Being less on oil and great on taste this appetizer will surely win a lot of praise.
Ingredients – Serves 2 (Prep time 15 mins, Total Time 35 mins)
Spring mix – 1 Bowl
Sliced almonds – 1 tablespoon
Walnuts – 6/7
Brocolli diced – 1/2 cup
Diced jalapenos – 1/3 cup (depending on taste)
Deveined shrimps – 9/10 (Skin on)
Coconut powder – 1 Table spoon
Basil – 7/8 leaves
Diced onions – 1/2 cup
Black pepper – 1/2 teaspoon
Olive oil – 3 teaspoons
Salt to taste
Mix the de-veined shrimps with coconut, basil, jalapeño, salt, olive oil, diced onions, lemon juice and broccoli. Let it marinate for 10-15 minutes.
Grilling The Marinated Shrimps and Veggies: Preheat grill pan to 350F
Place the marinated shrimp with veggies on the grill roughly 3 minutes on each side.
In a bowl mix the spring mix with sliced almonds, walnuts and feta cheese and serve the grilled shrimp as suggested below. Garnish with crushed black pepper.
