Grilled Chicken and Lamb Links

We had friends coming over for dinner today and I decided to make chicken and lamb links for dinner. Chicken links with mango and habanero, Lamb links with roasted garlic and Jalapeno served with fiery corn salad (Get the recipe for the fiery corn salad is here).

Ingredients: Serves 4 (Total Time : 40-45 minutes)

Minced chicken – 400gms
Mango chopped – 1/2 cup chopped
Minced lamb – 400gms (Julienne)
Freshly crushed black pepper – 1/2 teaspoon
Sweet corn – 2 cup
Lemon juice – 2 teaspoons
All spice – 1 teaspoon
Paprika – 2 teaspoons
Grape Tomatoes – 8-9 tomatoes
Roasted Garlic Cloves Finely chopped – 5/6 cloves
Chopped Jalapeno: 1/3 cups
Olive oil – 4 teaspoon
Dry Habenero – 1 whole (chopped finely)
Salt to taste

Grilling: Preheat oven to 400F

 Chicken Links

Mix the minced chicken with all the dry spices – paprika, all spice and crushed black pepper. Add olive oil (2 teaspoons), salt and the chopped mango to the mix. Make smalls balls and roll them into sausage shapes – links. Sprinkle the sausage links with the dry habanero flakes.

Place the chicken links on the grill for a good 20-22 minutes and then broil for 5-7 minutes. Check in between to see if done.

 Lamb Links

Mix the minced lamb with egg and crushed black pepper. Grind the mixture finely. Add olive oil (2 teaspoons), salt, chopped jalapeno, chopped garlic and mix well. Make smalls balls and roll them into sausage shapes – links. Sprinkle the sausage links with the dry habanero flakes.

Place the chicken links on the grill for a good 20-22 minutes and then broil for 5-7 minutes. Check in between to see if done.

Serving:

I paired up the lamb and chicken links with fiery corn salad and served bread and garlic infused olive oil on the side.
