Continuing with veggie delights, today we are grilling mushrooms along with veggies. We will be platting them fancy – mini mushroom sliders. Mushrooms are rich in texture, taste and nutrition. They are extensively used worldwide for cooking and medical purposes. For our salad today we will be using button mushrooms.
Button mushrooms – 10/12 mushrooms (remove stem)
Freshly crushed black pepper – 1/2 teaspoon
Dark sauce – 1 teaspoon
Guacamole – 1 cup
Sweet potatoes – 1/2 cup(cut in shape of rings)
Sweet potatoes – 1/2 cup (cut them into sticks like french fries)
Lemon juice – 1 teaspoon
Onion rings – 1 cup
Red Thai chilies finely chopped – 1
Grape tomatoes– 5-6 tomatoes
Coriander chopped finely – 2 teaspoons
Mint leaves – 7-8 small leaves
Mint leaves finely chopped – 1 teaspoon
Olive oil – 2 teaspoons
Salt to taste
Grilling: Preheat oven to 400F
Marinate the mushrooms with dark soya sauce, black pepper, salt and a spoon of olive oil. Keep it aside for a good 20 minutes.
Take the rest of vegetables, add salt and brush them with olive oil. Now grill all the veggies for a good 10 minutes and then broil for 4 – 5 minutes. Keep checking in between so that none of the vegetables get charred.
In a bowl mix the guacamole with coriander, mint and some grilled onion rings. Add salt and red chilies along with lemon juice. Mix well.
