Mango and chicken go amazingly well together, and this lethal combination dictates our salad today. Not only is this salad simple and flavorful but a delight to the eyes as well.
Minced chicken – 200gms
Mango chopped – ½ cup chopped
Carrot – 1/2 cup (Julienne)
Freshly crushed black pepper – 1/2 teaspoon
Sweet corn – 1/2 cup
Lemon juice – 2 teaspoons
All spice – 1 teaspoon
Paprika – 1/3 teaspoon
Grape Tomatoes – 5-6 tomatoes
Spring Mix – 1 Bowl
Olive oil – 1 teaspoon
Salt to taste
Grill Chicken Links: Preheat oven to 350F
Mix the minced chicken with all the dry spices – paprika, all spice, salt, and freshly crushed black pepper. Add olive oil, carrot (julienned) and the chopped mango to the mix. Make smalls balls and roll them into sausage shapes – links.
Place the chicken links on the grill for a good 18-20 minutes and then broil for 5-7 minutes. Check in between to see if done. Once done add shredded cheese on top.
In a service bowl add the spring mix along with grape tomatoes cut into halves. Add salt to taste and lemon juice. Cut the links into small pieces and toss with the salad. Plate up the salad and enjoy. Don’t forget to give this a try and share.
