Fish Biscuit Salad

This recipe is a complete showstopper. it’s delicious, nutritious and will definitely leave you asking for more. Well my two cents for good food is primarily defined by taste, aroma and sight, and this will scintillate all your senses.

Ingredients:

Swai Fillet – 1 Fillet (cut into 8 pieces)
Whole wheat sub rolls – 3 (cut into halves, approximately 3 inches)
Crushed Black Pepper – 2 teaspoon
Paprika – 1/3 teaspoon
Cilantro finely chopped – 1/3 Cup
Marina sauce – 1 teaspoon
Garlic finely chopped: 1/2 teaspoon
Mandarin – 1 whole
Lemon Juice – 1 teaspoon
Raisins – 1/3 cups
Fresh rosemary – 1 teaspoon
Zucinni finely diced : 1/2 cup
Plum chopped finely – 1 whole fruit
Olive oil – 3 teaspoons (Infused with Sundried tomatoes. Perfectly fine in you use olive oil instead)
Salt to taste

Marinating The Fish

Pat the fish dry, beat the fish to flatten them out. Add all the dry spices (crushed black pepper, paprika) long with lemon and salt. marinate the fish for a good 20 minutes.

Brush the sliced subs with olive oil and rosemary. place the fish strips on the bread, glaze with marina sauce. top with chopped cilantro and garlic.

Grilling The Fish: Preheat oven to 350F

Place the marinated fish in the Grill for a good 18-20 minutes. Check to see if the fish is done.

Salad Mix

In a bowl toss the zuccini strips, diced plumps and madarin. Add lemon juice, raisins and toss again. Serve along with the baked fish biscuits.
