There are days when you decide to do absolutely nothing. I realized 8 months into 2016 I haven’t taken a day off and was entitled to a long day only to myself. I quickly checked my scheduled – no calls, no customer meetings, nor anything important and I took the day off. Started the day with a walk on the nearby trail, had my cup of milk (I don’t drink coffee or tea), went to spa, met my girlfriends over lunch. What a perfect day! And like any perfect day this day needed to end with an absolute gorgeous dinner – My special grilled Meat Ball Salad
Servings – 2 People
Minced chicken – 200 gm
Chopped coriander – 3 tablespoons
Chopped mint leaves – 1 tablespoon
Sweet bell pepper – 1/2 cup finely chopped
Serrano pepper finely chopped – 1/2 teaspoons (optional)
Freshly crushed pepper – 1/2 teaspoon
Lemon juice – 2 teaspoons
Olive oil – 2 teaspoons
Spring Mix – 1 Bowl
6 Strawberries – cut in halves
Blueberries – 1/2 cup
Salt to taste
Chicken Balls: Preheat oven to 350F
In a bowl mix the minced chicken with chopped cilantro, chopped mint, crushed pepper, Serrano pepper, 1 teaspoon of lemon juice, 1 teaspoon of olive oil and salt.
Once all the ingredients have been mixed, shape into balls ( approx 12 )and keep it resting for at least 10 minutes.
Brush the grill pan with olive oil, add the chicken balls and Grill at 350F for 15-18 minutes.
When the chicken is almost done say 70% it leaves juices. Collect it, we will be using this as the salad dressing later. Once done set it aside. The wooden skewers are for plating up later.
In a service bowl add the spring mix along with sweet corn. Add the dressing we collected previously along with a pinch of salt. Thread the chicken balls into the skewers.Plate up the salad and the skewers. Isn’t it gorgeous? Don’t forget to Share.
