Healthy Salads- Grilled Chicken Salad

Prep Time: 5 mins     Total Time: 25 mins

Servings – 1 Large Bowl

Ingredients:-

Minced Chicken – 150 grams
Sweet Corn – 1/2 cup
Sweet Bell Pepper – 1/3 cup (Julienne)
Red Onions – 1/3 cup (Julienne)
Black Pepper – 1/2 teaspoon
Spring Mix – 1/2 Cup
Romaine Lettuce – 1/2 Cup
Garlic – 2/3 cloves
Blue Berries – 1/3 Cup
Egg – 1 egg
Lemon Juice: 1 teaspoon
Olive Oil – 2/3 teaspoons
Salt to taste

Grilling The Chicken:

Oven: Preheat oven to 400F

In a bowl mix the minced chicken, egg, peppercorn and garlic in a bowl. Add salt to taste. Make a paste of this mix in a blender and set it aside.

In a grill pan drizzle 1 teaspoon of olive oil add the onions and the sweet bell peppers. Pour the chicken mix paste on to the grill pan and drizzle with olive oil. Grill at 400F for 15 minutes followed by  5 minutes of broiling. Check to see if the chicken is done. Once done set it aside.

Salad Mix:

In a bowl mix the greens, blueberries and the sweet corn kernels. Add a pinch of salt and pepper along with a teaspoon of freshly squeezed lemon juice. Plate up the grilled chicken with the salad mix and it’s done. Enjoy this juicy, fresh salad and don’t forget to share.
