In between yesterday and today I have jumped on the weighing scale at least four times. See! what eating salads does – it makes you hopeful. I will be cooking Spicy Baked Fish(Swai) Salad today. In case you do not have Swai fillet, feel free to use any other fish instead. It can Cod, Tilapia, Salmon or anything you like. I choose Swai Fillet as that’s what I have in by freezer.
Servings – 2
Swai Fillet: 1 Fillet (cut into halves)
Sweet Corn -1/2 cup
Crushed Black Pepper – 1 teaspoon
Paprika – 1/3 teaspoon
All Spice – 1/4 teaspoon
Spring Mix – 1/2 Cup
Romaine lettuce – 1/2 Cup
Ground Garlic Powder: 1/2 teaspoon
Blue Berries – 1/3 Cup
Lemon Juice: 1 teaspoon
Olive oil – 3 teaspoons (Infused with Sundried tomatoes. Perfectly fine in you use olive oil instead)
Salt to taste
Grilling The Fish: Preheat oven to 350F
Marination: Marinate the fish with 1 teaspoon of olive oil, freshly squeezed lemon juice, add all the dry spices – paprika, ground cinnamon, all spice, ground garlic powder and salt to taste. Also depending on your spice level you can increase the amount of paprika. Remember It’s important to marinate the fish at least for 10 minutes. Spray the grill pan with olive oil, add the marinated fish fillets and Grill at 350F for 15-18 minutes. Check to see if the fish is done (awesome aroma would be an indicator as well). Once done set it aside.
In a bowl mix the greens, blueberries and the sweet corn kernels. Add a pinch of salt and freshly squeezed lemon juice. Drizzle with olive oil. Plate up the spicy grilled fish with the salad mix and it’s done. Enjoy this juicy, fresh salad and don’t forget to like, comment and share.
